You can export 16 bit RAW or PNG grayscale heightmap (from the text exporter plugin). This contains the data in 16 bit (and not the normal 8 bit associated with normal greyscale images). You can convert the exported images to 8 bit with programs like Photoshop but you will loose terrain precision.
You can also create your own plugin to write 8 bit heightmaps (it is pretty easy as you can use 16 bit export as example).
In general you don't want to use only 8 bit because this is not enough to represent height details, that's why we didn't included a 8 bit export out of the box (and we preferred 16bit).
